Canopy Cleaning vs Filter Exchange — What Does Your Kitchen Actually Need?

Walk into any commercial kitchen and you’ll find two things working hard above the cookline: the canopy and the grease filters inside it. They’re often talked about as one job, but canopy cleaning and filter exchange are actually two different services — and most kitchens need both.
Here’s the difference, and how to work out what your kitchen needs.
What is canopy cleaning?
Canopy cleaning is the deep clean of your whole kitchen exhaust system. That means the canopy hood itself, the inside of the ductwork that carries air out of the building, and the exhaust fan on the roof or wall.
Over time, grease vapour from cooking condenses and builds up inside these surfaces. That build-up is a fire risk and is exactly what the Australian Standard AS 1851 is designed to control. Depending on how heavily your kitchen is used, a full canopy and exhaust clean is typically needed every 3 to 12 months.

What is a filter exchange?
Grease filters sit in the canopy and catch grease before it enters the duct. They clog up far faster than the duct itself — in a busy kitchen, within days or weeks.
A filter exchange service swaps your dirty filters for freshly cleaned ones on a regular schedule. There’s no downtime and no washing filters in your own sinks: the old filters come out, clean ones go in, and the dirty ones are taken away to be professionally cleaned for the next exchange.
Which one does your kitchen need?
Usually both, because they do different jobs:
- Filter exchange keeps the first line of defence working day to day. Clean filters capture grease properly, keep airflow strong and reduce how much grease ever reaches your duct.
- Canopy and exhaust cleaning deals with the grease that inevitably gets past the filters and settles in the ductwork and fan — the hidden build-up that AS 1851 and insurers care about.
Think of it like servicing a car: the filter exchange is the regular oil change, and the canopy clean is the full service. Skipping either one catches up with you eventually.
How often?
- Filters: busy kitchens often exchange weekly or fortnightly; lighter-use kitchens may stretch to monthly.
- Canopy and duct: typically every 3 to 12 months depending on cooking volume, in line with AS 1851.
