Canopy Clean
Commercial kitchens can become greasy quickly and this can become a major fire hazard. AS 1851-2012 provides a maintenance framework for commercial kitchen exhaust systems. The cleaning schedule must also account for grease build-up and your site requirements. We'll clean your canopy and exhaust system as part of our kitchen cleaning program.

Compliance Program – AS 1851
Our commercial kitchen cleaning program supports maintenance to AS 1851-2012 for kitchen exhaust systems. The inspection and cleaning schedule is agreed for your site and its operating conditions. Plan and record component-specific tasks:
- Inspect grease filters and agree cleaning or exchange requirements
- Check grease gutters, canopy interiors and the exhaust plenum
- Confirm accessible ductwork and exhaust fan cleaning
- Review findings and the next service against applicable requirements

Exhaust Duct Clean
Grease can collect beyond the visible canopy, inside the exhaust ductwork and fan. We agree the accessible components and cleaning scope, then document completed work and any access limitations.

Grease Filter Exchange Program
Planned filter exchange replaces grease-laden filters with cleaned replacements suited to your canopy. We review filter condition over successive visits and discuss a schedule matched to your cooking load.

Electrostatic Filter & Unit Servicing
We clean and service kitchen exhaust electrostatic precipitator (ESP) units across all brands and system types. Collection cells, pre-filters and housings are cleaned so the unit supports the capture of fine grease and smoke particles. Electrostatic unit cleaning.

How Often Do I Need To Clean My Kitchen Canopy & Exhausts?
Plan kitchen canopy and exhaust maintenance to AS 1851-2012. Inspection findings, grease deposits, cooking hours, fuel and system condition inform the cleaning schedule; a single interval does not suit every kitchen. Agree separate filter, canopy, plenum, duct and fan tasks, identify access limitations, and use completed-service reports to review the next service against applicable requirements.
Why Clean a Commercial Kitchen?
Grease deposits in canopies, plenums, exhaust ducts and fans increase fire risk. Cleaning within an agreed scope helps manage those deposits and supports routine kitchen hygiene and equipment care. Completed-service PDF reports and photos document the work for your maintenance history. Confirm any site-specific documentation requirements with your insurer or building manager.
Melbourne kitchen exhaust cleaning: access and service planning
Clean Air Filtration has serviced commercial kitchens for over 30 years, including restaurants, cafes, hotels, clubs, schools and hospitals. Tell us your operating hours, canopy size, duct route and fan location so we can confirm the scope and a suitable service time.
Cleaning beyond the visible canopy
Grease can accumulate in concealed duct runs between the canopy and exhaust fan. We clean accessible internal surfaces and record the completed work and any inaccessible sections. Where access is insufficient, discuss duct access hatches with our team before booking.
Routine canopy filter exchange supports filter care between complete cleans; it does not replace cleaning the plenum, ductwork or fan. After-hours arrangements are confirmed for your site.

AS 1851-2012 kitchen exhaust cleaning with audit-ready portal records
Our kitchen exhaust cleaning is carried out to AS 1851. Every client receives a client portal, even for a one-off clean. Completed service reports and photos are added to it, giving your team a record of the work without chasing paperwork. Clean Air Filtration holds $20 million public liability insurance.
Your quote confirms the components to be cleaned and any access limitations. Discuss canopy interiors and exteriors, grease gutters and drip trays, filter housings, exhaust plenums, ductwork and roof discharge fans with our team when arranging the service.
Reports document the completed work; they are not a guarantee of insurance cover, council approval or blanket certification of your premises. Confirm any specific documentation requirements with your insurer or building manager before booking.

Canopy cleaning frequency for commercial kitchens
A single timetable does not suit every kitchen. Cooking hours, fuel, menu, grease deposits and system condition determine when inspection and cleaning are needed. Filter exchange does not replace full canopy, duct and fan cleaning.
| Kitchen operation | Maintenance planning |
|---|---|
| Charcoal, wood or other solid fuel | Flag solid-fuel cooking when booking. Soot and grease loading may require closer inspection and a more frequent clean. |
| Busy frying, grilling and long trading hours | Review grease deposits regularly and agree a schedule suited to heavy cooking demand. |
| Lower-grease cooking or shorter operating hours | Base the schedule on inspection findings rather than assuming the system needs less maintenance. |
How your canopy cleaning quote is calculated
Tell us the canopy size, cooking equipment, duct access, fan location and preferred service time. Photos help identify the scope. We confirm the work and price before booking, including any site-specific access or after-hours arrangements.

Canopy, ductwork, access panels and exhaust fans: what we clean
A kitchen exhaust is one connected path. Grease that gets past one stage settles in the next, so a clean canopy alone does not mean a clean system.
1. Canopy & grease filters
The hood captures smoke and grease-laden air above the cooking line. Baffle or mesh grease filters trap a large share of the grease, and we clean the canopy inside and out.
2. Plenum
The chamber behind the filters is out of sight and often missed. Grease that passes the filters collects here. Why the plenum matters.
3. Ductwork
Duct runs carry exhaust air through ceilings and risers. We clean through accessible openings, and where sections have none we can supply and install sealed access hatches so the full run can be reached.
4. Exhaust fan
The roof or in-line fan, including the impeller and housing, is cleaned of grease so it keeps moving the air the system was designed for. Electrostatic units are serviced where fitted.
Kitchen exhaust systems are designed and installed by mechanical services professionals to the Australian ventilation standard AS 1668.2. Our job is the ongoing cleaning that keeps that system performing, carried out in line with AS 1851 and recorded with a PDF report and photos in your service records. We work across hospitality, healthcare, education and commercial sites.
What a standard clean includes
Our kitchen exhaust cleaning is carried out in accordance with AS 1851. Anything we cannot safely reach is reported in your service report rather than assumed clean.

Match the service to your kitchen exhaust system
Grease filter cleaning and exchange manages removable canopy filters between full cleans. If your kitchen exhaust has electrostatic filtration, discuss ESP unit and collector-cell servicing for the installed brand and system. Neither service replaces cleaning the accessible canopy, plenum, ductwork and exhaust fan.
A better brief. A clearer quote.
Tell us about your kitchen, equipment and trading hours. For electrostatic systems, include the unit make or a photo of its identification plate.
